1 c. crushed tomatoes
2 cups fresh spinach
6 large eggs
Salt and pepper to taste
Fresh parsley or cilantro for garnish
Optional: Feta cheese for topping

Instructions:
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened.
Stir in cumin and smoked paprika, cooking for an additional minute until fragrant.
Add the crushed tomatoes, simmering for 10 minutes until slightly thickened. Season with salt and pepper.
Gently stir in the fresh spinach until wilted.
Create small wells in the sauce and crack an egg into each well. Cover and cook until the eggs are set to your liking (about 5-7 minutes).
